Cancer fighting Brussel sprouts
Brussel sprouts get a bad rap! I think most of us as kids were forced to eat these weird green unknown veggies and when unseasoned, they are less than desirable. But this miso maple shaved Brussel sprout toast is about to change the script.
Not only does this taste delicious, but it is incredibly beneficial for your health. Brussel sprouts are especially high in an antioxidant called kaempferol. During test-tube studies, kaempferol was shown to reduce cancer cell growth, ease inflammation, and improve heart health. Another study found that Brussel sprouts could protect against carcinogens (cancer causing agents), and even prevent oxidative damage to cells. Who knew these little green monsters could be so beneficial to our health! The next time you are craving avocado toast, try this Brussel sprout toast instead and soak up all the incredible benefits.
Ingredients
Half a bag of Brussel sprouts (10 large)
1 tbsp maple syrup
1 tbsp miso
2 tbsp olive oil
1 tsp garlic powder
1 tsp red pepper flakes (to taste)
1 tsp pepper (to taste)
1 tsp salt (to taste)
2 pieces of bread
A squeeze of lemon
Preparation
1. Use a mandolin or knife to finely chop the Brussel sprouts. Add olive oil and Brussel sprouts to a pan on medium heat for 5 minutes or until they begin to brown.
2. Season with garlic granules, salt, and pepper.
3. Separately mix miso, maple syrup, and red pepper flakes until combined.
4. Toast bread and assemble placing Brussel sprouts down first, then drizzling the miso glaze, and topping with red pepper and lemon. Enjoy!
