Almond Carrot Top Pesto

Ingredients

1 lb brussels sprouts (bag of pre shaved) 1/4 cup olive oil 2 tablespoons aged sherry vinegar juice of 1/2 a lemon 2 tablespoons minced shallot 2 cloves minced garlic 1 tsp salt, 1 tsp pepper 1/4 cup shaved parmesan cheese (or vegan alternative) 1/2 cup sliced almonds 1/4 cup of pomegranate seeds (or vegan alternative) (or vegan alternative)

Preparation

1. Add olive oil, vinegar, lemon, shallot, garlic, and salt and pepper to a bowl. Whisk until full combined.2. Then add bag of pre-shaved Brussels sprouts, or use a mandolin to shave Brussels sprouts finely.3. Add Brussels sprouts to a bowl and mix until fully seasoned.4. Plate Brussels sprouts, then shave Parmesan using a potato peeler.5. Top with sliced almonds and pomegranates.
