Almond Carrot Top Pesto

Ingredients

1 container (or 12oz, roughly 20 pieces) pitted medjool dates 3/4 cup unsweetened almond milk 1 tsp cinnamon (as preferred) 1/4 tsp salt 2 cups hot water

Preparation

1. Remove pits from dates, place in a bowl and cover with hot water. Let soften for 20 minutes.2. Add to a blender with almond milk, cinnamon, and salt.3. Blend until smooth, adding additional almond milk as needed until desired consistency is reached.4. Serve with sliced apples and enjoy!.
