Almond Carrot Top Pesto

Ingredients

1 cup chickpea flour 1 cup filtered warm water 3 tbsp olive oil 1/2 tsp celtic (or himalayan pink) salt toppings: 1 diced avocado 2 diced tomatoes 1 shallot minced 1/2 cup microgreens hot sauce of choice

Preparation

1. Add pancake ingredients to a bowl and whisk until fully combined. Set aside and let sit at room temperature for 30 minutes.2. Put a pan on high heat, once hot, add a dash of olive oil and fully coat.3. Cook 2-3 minutes until bubbles begin to form and the edges get golden brown (to your liking).4. Top with your favorite topping such as avocado, tomato, crispy shallots, micro greens, and hot sauce. This recipe makes 4 pancakes.
