Almond Carrot Top Pesto

Ingredients

2 tbsp olive oil 1 medium white onion, diced 1 belle pepper, diced 4 cloves garlic, minced 1/2 cup dried lentils, rinsed 1 cup quinoa, rinsed 48 ounces (6 cups) vegetable stock 1 can (15 ounces) cannellini beans, drained and rinsed 1 can (15 ounces) black beans, drained and rinsed 1 large can (28 ounces) diced tomatoes 1 can (15 ounces) corn kernels, drained 2 tsp chili powder 1 tsp paprika 1 tsp cumin 1/2 tsp white pepper salt, to taste optional toppings: shredded cheese of choice (or nutritional yeast), greek yogurt, sour cream, or vegan alternative, fresh cilantro or parsley, onions, tortilla chips (or vegan alternative) (or vegan alternative)

Preparation

1. Add onion, garlic, and bell pepper, sauting until softened, about 5 minutes.2. Stir in the cannellini beans, black beans, corn, diced tomatoes (with juice), lentils, and quinoa.3. Add chili powder, paprika, cumin, white pepper, and vegetable stock. Stir to combine.4. Bring to a boil, then reduce to a simmer. Cover and cook for about 15 minutes, until the lentils and quinoa are tender.5. Let the chili simmer uncovered for another 20-25 minutes, stirring occasionally, until thickened.6. Taste and season with salt as needed. Serve topped with cheese, Greek yogurt or sour cream, fresh herbs, chopped onions, and tortilla chips for crunch.
