Made with fresh parsley, cilantro, garlic, and olive oil, it’s the perfect topping for roasted vegetables, grains, or plant-based proteins. Almond Carrot Top Pesto

Ingredients

1/2 cup finely chopped parsley 1/4 cup finely chopped cilantro 2 tbsp finely chopped oregano 4 cloves of garlic minced 1 red chili finely chopped 1 tsp red pepper flakes (to taste) 2 tbsp red wine vinegar 1/2 cup olive oil 1 tsp flakey sea salt 1 cup arugula 1/2 block of firm tofu 1 tbsp olive oil

Preparation

1. Finely chop the parsley, cilantro, and oregano, then add it to a bowl.2. Mince the garlic cloves and remove the seeds and finely dice the red chili.3. Add red pepper flakes based on heat tolerance.4. Incorporate red wine vinegar and olive oil mixing until combined.5. Top with flakey sea salt and give it one last stir.6. If eating as pictured, cut tofu in long strips and sear in a pan with olive oil until brown.7. Lay a bed or arugula, then the tofu, and drizzle chimichurri sauce on top. Enjoy!.
