Ingredients
2 small bunches or 1 large dino kale 1 can chickpeas 1 cup cooked quinoa 2 tbsp olive oil 2 tsp garlic powder 2 tsp paprika 2 tsp red pepper flakes (to spice preference) 2 tsp black pepper 2 tsp salt 1 cup tomatoes 1/2 an avocado grated parmesan (or vegan alternative- optional) dressing: 1 tsp dijon 1/4 cup olive oil zest of 1/2 a lemon juice of half a lemon (or vegan alternative) (or vegan alternative)
Preparation
1. Cook quinoa as instructed, optional use vegetable stock instead of water for more flavor.2. Drain and rinse chickpeas, pat dry to remove any excess moisture. Optional to remove skin.3. Add chickpeas and cooked quinoa to a lined baking sheet.4. Season both with olive oil, garlic powder, paprika, red pepper flakes, pepper, and salt.5. Cook at 375 degrees for 30-40 minutes or until they are browned and crunchy.6. De-stem kale and massage, then finely dice.7. Make the dressing by adding mustard, olive oil, lemon zest, and lemon juice to a bowl. Whisk together and adjust flavors to preference.8. Remove chickpeas and quinoa from oven and let cool a few minutes.9. Assemble salad by adding kale, diced tomatoes, diced avocado, crispy chickpeas and quinoa, dressing, and sunflower seeds.10. Mix well and top with grated Parmesan (optional). Enjoy!.
