Almond Carrot Top Pesto

Ingredients

1 cup almond flour 1/2 cup oat flour 3 tbsp melted coconut oil 1/4 cup maple syrup pinch of salt 1 cup peanut butter (crunch or creamy) 1/4 cup maple syrup pinch of salt 1/2 cup pitted dates (roughly 12 small or 8 large) 1 tsp vanilla extract 3/4 cup vegan chocolate chips 1 tsp coconut oil flakey sea salt (or vegan alternative) (or vegan alternative)

Preparation

1. To make the shortbread base, pour almond and oat flour in a sieve to remove large clumps adding it to a bowl. Then add melted coconut oil, maple syrup and salt. Mix together until fully combined.2. Line baking dish with parchment paper. Then pour in dry mixture flattening with a spoon to get an even layer. Put in freezer until caramel layer is ready.3. To make the caramel layer, add peanut butter, maple syrup, salt, vanilla, and dates to a blender, blending until smooth. Then layer on top of shortbread base, smoothing with a spoon.4. Let set overnight. Then melt chocolate chips with coconut oil in a bowl. Pour chocolate layer overtop the caramel.5. Place pack in freezer to set, then top with flaky sea salt.6. Cut into bars, store in freezer, and enjoy!.
