Ingredients
1 head of cauliflower 2 tbsp olive oil 1 tbsp za’atar seasoning 1 tsp salt 4-5 cloves of garlic halved 1 cup quinoa 2 cups vegetable stock 1 bunch curly kale, washed and chopped 1 can chickpeas, drained and rinsed 1 can hearts of palm, drained 1 container cherry tomatoes 3 small cucumbers (or one large) 1/2 cup kalamata olives 1 tbsp capers dressing: 3 tbsp olive oil 1 1/2 tbsp red wine vinegar juice of half a lemon 1 tsp za’atar seasoning
Preparation
1. Preheat oven to 375 degrees. Line a baking tray.2. Chop cauliflower into small pieces, add to tray with garlic cloves. Drizzle with olive oil, zaatar seasoning, and salt.3. Cook for 30 minutes or until beginning to brown.4. Cook quinoa in a pot as instructed. Use vegetable stock instead of water for extra flavor.5. To a large bowl, add kale, rinsed chickpeas, hearts of palm, tomatoes, cucumbers, olives, and capers. Then add cauliflower and quinoa.6. In a separate bowl, mix olive oil, red wine vinegar, lemon juice, and zaatar seasoning. Whisk together until fully combined.7. Drizzle dressing overtop salad and mix. Enjoy!.
