Almond Carrot Top Pesto

Ingredients

1 bunch dino kale 1/2 green cabbage sliced 4 green onions thinly sliced 1/2 cup cilantro 1/2 cup grated parmesan 1/2 cup chopped peanuts 1/2 jalapeños diced 1/2 cup microgreens dressing: 1/3 cup roasted peanut oil 1 tbsp apple cider vinegar juice of half a lime 2 tsp dijon mustard 1 tsp maple syrup red pepper flakes to taste salt and pepper to taste (or vegan alternative) (or vegan alternative)

Preparation

1. Massage kale then finely shred along with the cabbage. Add to a bowl with sliced green onion, diced cilantro.2. Separately mix all ingredients into a bowl. Add red pepper flakes to spice preference.3. Add Parmesan, chopped peanuts, jalapeos, and microgreens. Then drizzle with the dressing and mix until combined. Enjoy!.
