Reinventing Brussels Sprouts with a Sweet-Savory Twist

Welcome to my new series second changes, where I take the least liked foods and turn them into something delicious, because every veggie deserves a second chance!

First up is Brussels sprouts. We�ve all had the soggy, boiled Brussels that probably scared us for life but with all their health benefits, it�s worth it to try again. Not only are Brussels sprouts packed with vitamin K, vitamin C, and fiber, but they are also rich in antioxidants, help reduce inflammation, and support blood sugar levels. So why not give them another try?!

This maple miso warm salad is a sweet yet savory dish that leaves you wanting more.

Almond Carrot Top Pesto

Ingredients

Bag of Brussels sprouts (roughly 10)
1 shallot, finely sliced
1 tbsp olive oil
1 tsp white miso
1 tbsp maple syrup
1 small knob of ginger, minced
1-2 tbsp water (as desired for thickness)
1 tbsp sunflower seeds

Preparation

1. Shave the Brussels sprouts with a mandolin and finely chop the shallot.
2. Heat olive oil in a pan. Add shallots, cooking for 1-2 minutes until softened.
3. Add the Brussels sprouts, cooking until they begin to brown, approximately 5 minutes.
4. In a separate bowl, combine miso, maple syrup, and minced ginger. Whisk together, adding water slowly to achieve the desired dressing consistency.
5. Plate the warm Brussels sprouts, drizzle with the prepared dressing, and sprinkle with sunflower seeds for added crunch. Savor the delightful blend of flavors!
