1 bag of rainbow carrots 2 tbsp olive oil 2 tbsp maple syrup 1 tbsp zatar seasoning 1/2 tsp red pepper flakes (more as desired) 1/2 cup greek yogurt (or coconut yogurt) 1 garlic clove minced juice of half a lemon 2 tbsp chopped pistachios (or vegan alternative) (or vegan alternative)
Preparation
1. Use a potato peeler to peel the carrots, then cut in half to create equal thickness.2. Add to a lined baking sheet, then drizzle with olive oil and maple syrup. Sprinkle seasoning and red pepper flakes, then mix until evenly coated.3. Bake at 425 degrees for 20-25 minutes or until they begin to char.4. Separately, add yogurt, minced garlic, and lemon juice to a bowl. Mix until combined.5. Plate yogurt on a plate, then add carrots, and top with crushed pistachios.
