Pumpkin Apple Cinnamon Overnight Oats

Every time pumpkin season rolls around I am always dying to dive into the pumpkin spice recipes, but I always find myself with leftover pumpkin purée that ends up going bad in my fridge. Instead of throwing it out, I have come up with a perfect solution that makes for an easy on the go breakfast, or something to enjoy on a cold day. This is the best fall tasting overnight oats you’ll have all season. It’s warm, delicious, and waste free which makes it that much sweeter. Use up those leftovers and give this yummy breakfast a try.

Almond Carrot Top Pesto

Ingredients

1 cup oats
1 tbsp chia seeds
1 tbsp hemp seeds
2 tbsp pumpkin purée
1 cup almond milk
2 tbsp maple syrup
1 tsp cinnamon
1 tsp pumpkin spice
1 apple
1 tbsp cinnamon
1/2 cup of water

Preparation

1. Add oats, chia seeds, hemp seeds, pumpkin purée, nut milk, maple syrup, cinnamon, and pumpkin spice to a jar. Mix until fully combined.
2. Place in fridge overnight to harden.
3. Slice apple and add to a hot pan. Then add water and cinnamon. Cook on medium until the apple is soft.
4. Add to the overnight oats and top with extra maple syrup. Enjoy!
