Almond Carrot Top Pesto

Ingredients

6 pitted dates
1 cup rolled oats
1 tbsp hemp seeds
1/2 tsp cinnamon
1/2 cup peanut butter
1 tsp vanilla extract
1 tbsp almond milk
1/2 cup coconut yogurt
1/4 cup raspberry jam

Preparation

1. Blend dates in a blender or food processor. Then add oats, hemp seeds, cinnamon, peanut butter, and vanilla.
2. Once blended, add almond milk for a smoother consistency, adjusting as needed.
3. Line a dish with parchment paper, then add in the base. Press down with hands or use a utensil.
4. Add coconut yogurt on top, then let freeze for 5 minutes.
5. Add raspberry jam, spreading smoothly. Cut into bars and enjoy!

Cooking Note:
