Almond Carrot Top Pesto

Ingredients

1 head cauliflower
6 cloves of garlic
3 tbsp olive oil
1 tsp salt
1 tsp pepper
4 pitted dates
1 tbsp chopped pistachios
2 sprigs of dill
1 tbsp tahini
Juice of half a lemon
1/4 cup of water

Preparation

1. Chop the cauliflower into bite-sized pieces. Place them on a lined baking tray with salt, pepper, garlic cloves, and 2 tbsp olive oil. Roast at 375�F for 30-40 minutes or until they begin to brown.
2. Chop the dates and add them to the cauliflower during the last 10 minutes of roasting.
3. Prepare the sauce by mixing tahini, lemon juice, and water. Adjust water quantity for desired thickness.
4. Plate the dish by drizzling tahini dressing, arranging the roasted cauliflower and dates, and garnishing with pistachios, dill, a squeeze of lemon, and a final drizzle of olive oil. Enjoy this flavorful delight!
