1 package rice noodles 1/4 head of cabbage 1 carrot thinly sliced 1/2 cucumber sliced 4 mini peppers sliced 10 cherry tomatoes garnish: 1 tbsp cilantro 1/2 tbsp sesame seeds 2 green onions sauce: 1/2 cup runny natural peanut butter 2 tbsp rice vinegar 3 tbsp soy sauce 1 tbsp sesame oil 2 tbsp warm water (for desired thickness) 1/2 tsp grated ginger 1/2 tsp chili powder, red pepper flakes, or other spice as desired
