Almond Carrot Top Pesto

Ingredients

1 package rice noodles 1/4 head of cabbage 1 carrot thinly sliced 1/2 cucumber sliced 4 mini peppers sliced 10 cherry tomatoes garnish: 1 tbsp cilantro 1/2 tbsp sesame seeds 2 green onions sauce: 1/2 cup runny natural peanut butter 2 tbsp rice vinegar 3 tbsp soy sauce 1 tbsp sesame oil 2 tbsp warm water (for desired thickness) 1/2 tsp grated ginger 1/2 tsp chili powder, red pepper flakes, or other spice as desired

Preparation

1. Cook rice noodles according to package. Thinly chop the cabbage, carrot, cucumber, peppers, tomatoes, and green onion.2. Add each vegetable to the bowl.3. Separately mix sauce ingredients, whisk until fully combined. Adjust for taste preference, texture, and spice.4. Add sauce into bowl, garnish with cilantro, sesame seeds, and green onion.5. Mix until fully combined and enjoy!.
