The homemade teriyaki sauce is made with natural sweeteners and low-sodium soy sauce, making it a healthier alternative to store-bought versions. Vegetables like spinach and edamame add additional iron, protein, and fiber to the table, while the rice provides a comforting base. Add your favorite plant-based protein, of tofu, for a complete meal that balances flavor and nutrition.

Almond Carrot Top Pesto

Ingredients

1 block firm tofu (frozen) 1/2 cup teriyaki sauce 1/4 cup soy sauce 2 tbsp rice vinegar 2 tbsp sesame oil 1-2 tsp red pepper flakes (to taste) 1 large container of spinach 1 cup edamame (frozen) 1 green onion finely chopped 1 tsp sesame seeds (or gluten-free alternative) (or gluten-free alternative)

Preparation

1. Add tofu to a container, then add teriyaki, soy sauce, rice vinegar, half the sesame oil, and red pepper flakes.2. Shake well and let marinate for 10 minutes. Then remove tofu and cut into cubes.3. Add the remaining sesame oil to a hot pan, then add the tofu and let crisp. Once beginning to brown, pour the remaining marinade over the tofu cooking until it begins to bubble.4. Pour container of spinach in pan and cook down.5. Separately add frozen edamame to a bowl and heat as instructed. Then add to hot pan and mix until fully incorporated.6. Plate with a side of white rice. Top with green onion and sesame seeds and enjoy!.
