Ingredients
1 1/2 - 2 tsp green curry paste (based on desired spice) 1 can coconut milk 6 cups vegetable stock 2 tbsp soy sauce 2 stems of broccoli 2 carrots, sliced 1 bell pepper, sliced 2 heads of bok choy 1 cup edamame shelled (frozen) 1/2 container of tofu 1 green onion 1 tsp sesame seeds
Preparation
1. Add curry paste, coconut milk and vegetable stock to a large pot.2. Then add chopped broccoli, carrots, bell pepper, bok choy, and edamame.3. Cut the tofu into small cubes and add it to the pot once the vegetables begin to cook.4. Top with soy sauce.5. Cover and cook on high until soup begins to simmer and vegetables soften, simmer for 5 minutes.6. Serve and top with fresh chopped green onion and sesame seeds.
