Ingredients
1 bag baby potatoes (24g) diced 1 tbsp olive oil 1 tsp dried oregano 1 tsp dried thyme 1 tsp garlic powder 1 tsp salt zest of half a lemon 1 head of broccoli cut into florets 1 can chickpeas rinsed and drained 1 tbsp olive oil 2 tsp harissa tzatziki: 1 large cucumber finely grated 1 cup soy yogurt (or greek) 1/4 cup fresh chopped dill juice of half a lemon 1 tsp garlic powder 1 tsp salt garnish: 1/2 cup sliced cherry tomatoes 1/4 white onion sliced thinly 1 tbsp chopped fresh dill (or vegan alternative) (or vegan alternative)
Preparation
1. Wash and cut potatoes in 4s, then add to bowl with thyme, oregano, garlic powder, salt, lemon zest, and olive oil. Mix until fully combined.2. Add to a lined baking sheet, bake at 400 degrees for 20 minutes.3. Then add the broccoli florets, and chickpeas to the same bowl. Sprinkle in the harissa and olive oil, mix until evenly coated.4. Once potatoes have cooked for 20 minutes, add the broccoli and chickpeas and cook for another 30 minutes.5. Separately grate the cucumber. Place into a cheese cloth or towel and drain liquid.6. To a bowl add shredded cucumber, yogurt, dill, lemon juice, and salt. Mix until fully combined.7. Plate the Tzatziki, then top with potato broccoli chickpeas, finish with fresh tomatoes, onion, and drill on top. Enjoy!.
