Almond Carrot Top Pesto

Ingredients

1 cup rolled oats
1/2 cup almond milk
1 banana
2 tbsp maple syrup
1 tsp vanilla
1 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
1 tbsp vegan butter
Toppings: Strawberries, Banana

Preparation

1. In a blender, mix rolled oats, almond milk, banana, maple syrup, vanilla, cinnamon, baking powder, and salt until smooth.
2. Butter a non-stick pan over medium heat. Pour the batter and flip when the edges begin to golden, roughly 2-3 minutes on each side.
3. Optionally, use heart-shaped cookie cutters to cut out pancakes, strawberries, and bananas.
4. Assemble the heart-shaped delights and top with maple syrup.
