Almond Carrot Top Pesto

Ingredients

1 cup cubed watermelon
1/2 cup feta cheese, cut into small cubes
1 cup cherry tomatoes
2 tbsp extra virgin olive oil
1 tbsp fresh basil, finely chopped
Pinch of salt

Preparation

1. Prepare the watermelon by cutting it into bite-sized cubes.
2. Cut the feta into small, equally sized cubes.
3. Wash and dry the cherry tomatoes.
4. Take small skewers or toothpicks and assemble each skewer with one piece of watermelon, one piece of feta, and one cherry tomato, repeating until each skewer is filled.
5. In a small bowl, mix together extra virgin olive oil, finely chopped basil, and a pinch of salt.
6. Drizzle the olive oil, basil, and salt mixture over the assembled skewers.
